Box #1, 2 Meals Pictured
I recently started one of those meal subscription box things called Hello Fresh, and we are LOVING it! They send you all the ingredients you need (minus a few basic/common things) right to your door, with the recipes!
Our first night was pan seared salmon served with a cucumber and honeydew mint salsa over a watercress salad with sweet potatoes... and tonight's dinner was prosciutto wrapped chicken saltimbocca served with a sauteed spinach. We also enjoyed our third and final box recipe for this week, BBQ rubbed pork chops with spicy plum relish & cilantro-lime forbidden rice.
A Meal From Box #2
Pan Seared Salmon with a Blistered Corn and Charred Peaches Arugula Salad with a Cumin-Coriander Vinaigrette.... I may not make the prettiest plate, but it was delicious. Even my veggie-hating husband ate two helpings of the salad.
They send these meals meant for 2 people, but they feed me, my husband and our 3 year old and there's still some left over for lunch tomorrow!!
